Steve's Barbequed Baby Back Ribs

- 4 TBSP Smoked Soy Sauce (if you can find it, was in La Paz) or:
-- 3 TBSP Soy Sauce
-- 1 TBSP Liquid Smoke
- 1 TBSP Mario's sauce (whatever kind of arbol chile sauce you have)
- 1/4 Tsp Onion Powder
- 1 TBSP Dried celery or 1 Tsp celery seed

- 1/2 cup (or so) S&W Mesquite Cooking Sauce and Marinade *
- 1/4 cup (or so) Rum **
- 1/4 Tsp White Pepper
- 1 Tsp Jamaican All Spice

* You can substitute just about any BBQ sauce here, whatever is handy
** Light or dark rum, whatever is handy

Baby Back Ribs:

Peel the skin off of the underside of the ribs, then marinade in a pan
or zip loc bag for a half hour or so, then slow cook on indirect heat,
at 350 degrees for about an hour, basting with the sauce every 15
minutes or so until done. The meat should be tender and separate from the
bone easily.
