Exquisitos Mexican Hot Dogs

We learned about these yummies while spending time in Santa Rosalia,
Baja California Sur. There was a cart you could get them from in front
of the church on Sunday nights. I tried them the other night, worked
great.

4 Hot Dogs
4 strips of Bacon
4 Buns
1 Can mild green chilies
1 Tomato
2 Slices white onion
Mayonnaise
Mustard (optional)

Wrap the hot dogs in the bacon strips and cook until the bacon looks
done in a frying pan. At the same time, heat up the green chilies in
a sauce pan. Chop the onion and tomato. When the hot dogs are cooked,
arrange on the bun with the chilies on one side, the tomatoes on the
other side, and the mayo and onion in the middle. Viola, you have a
reproduction of the Mexican flag.
