Chinese Pepper Steak


1 lb lean beef steak
2 Tbsp fat (Crisco? Bacon?)
2 Tbsp finely chopped onion
2 large green peppers cut in strips
1/2 cup celery cut on diagonal
1/2 cup beef consomme
Salt and Pepper
2 Tbsp chopped pimiento (optional)
2 tsp corn starch
3 Tbsp water
1 tsp soy sauce


1. Cut beef into thin strips; brown in hot fat over moderate heat;
drain off the excess fat.

2. Add onion, garlic, green pepper, celery, and consomme; season to
taste with salt and pepper, then cover and simmer 20 minutes.

3. Add pimiento and corn starch blended with water and soy sauce;
simmer five minutes, stir gently to thicken; serve with hot rice.

Serves 4

Steve's note: I think I may remove the beef after step 1, then add it back
in with step 3 ingredients. I'll try as is the first time.

Sally's note: I actually add 2 cups of broth because I like more sauce and so I add another tsp of soy sauce.
